Determined to make a Turkish dessert for the holidays, Umut taught me how to make semolina halva.
Below is our version and recipe for a lighter and healthier dessert.
semolina halva (English) / irmik helvası (Turkish)
- 1 cup Oil
- 1.5 cups Turkish Semolina (Irmik)
- 1 cup Sugar
- Pine Nuts (handful)
- 1.5 cups Milk
- .5 cup Water
- Orange and Lemon Zest
Mix the oil and semolina in a frying pan over medium heat and continuously stir until its golden brown in color.
Add the sugar and pine nuts, stir and cook together until the pine nuts start to change color.
Add the milk and water, stir and cook together until it’s evenly mixed together.
Add orange and lemon zest (Umut’s secret ingredient), mix together, and lower the heat. Close the lid and let sit for 20 minutes.
Turn the heat off the stove and let sit for 20 minutes before serving.
It’s best to eat as is, or accompanied with vanilla ice cream.
